I really did not know where to put this, but here we go.
1. Dragon Ball: Oh how I remember it so well. It's probably the first show I started following in-depthly, and definitely one of my most treasured childhood memories. 2. Inuyasha: Hearing the opening, Change the World, makes my heart melt, and makes me want to burst out in tears. In fact, after not watching the show for years, and finally watching the intro cinema recently, I started crying like a sick, orphan child, from a Charles Dickens novel. It may be a glorified soap opera, but hey, throw me a dress and call me Erica. 3. Pokemon: The flaws are unbelievable, but the first season of Pokemon is GOLDEN. I bet everybody here likes, or at least liked watching it.
Hmm... let's see. Top 5, how 'bout? Of course, I'm subject to "OOH WOW NEW DO WANT!" syndrome, so take that into account.
One Piece - It's likely my favorite anything ever. Honestly, I have no found a single flaw with One Piece; the characters, the pacing, the... hell, the everything is better than anything else I've watched. It's made me laugh and cry and cheer a dozen times within the span of five minutes. Oda takes everything that make Dragon Ball and Astro Boy and Shonen in general, then resculpts it from gold. My love of pirates and adventure probably contributes to my enjoyment, but, really, that's just the icing on the cake. One Piece is perfection incarnate, and that's not hyperbole.
Rurouni Kenshin - It's one of my classic favorites. I mean, it's very simple (assassin repents; becomes benevolent wanderer), but the depth applied is fantastic,and the characters very well done. Humor, action, philosophy - the only thing keeping this out of first is the fact they never animated the Revenge Arc, due to sickeningly suckish fillers. Though the Son of God Arc was pretty good, the rest was bad... but the Kyoto Arc more than balances things out.
Fullmetal Alchemist - This is a newer mention on my favorite's list; I watched the final episode and epilogue movie no more than a month ago. But it's just that good. The only one on this list that doesn't come directly from a manga (though it is based on a manga, it's REALLY different), it crafts a good, emotional, dark story in a short span of 51 episodes. The characters become real, and the action is out of this world. Five stars, definitely. Dub was great, too... I doubt we'll ever see a team of voice actors that good again.
Yu Yu Hakusho - I remembered enjoying it when I was younger, but not in depth... I picked up the DVDs a few months ago and found it to be better than I remembered. Again, the real charm is in the characters - each one is so incredibly different, but the way they interact is always entertaining. The dubwork is also a biggie; Justin Cook and Christopher Sabat and John Burgmeier and Chuck Huber and Cynthia Cranz and Linda Young and... honestly, EVERYONE is perfect in their roles. Among FUNi's best works.
Death Note - Another recent choice... and I'm a tad hesitant to put it on here. However, I can't think of anything better at the moment, so... here it is. I think you know my favorite part - charcterization is among the best I've ever seen. Conflict, mind games, action (yes, even the action!) is top notch - all thanks to Madhouse and their animation quality, of course. The second half is a tad weak, but the first is, like, Hulk-level strong, so, like Kenshin, it balances out.
...if we could include movies, though, I'd squeeze Porco Rosso and Castle in the Sky in. THOSE are fantastic. Close running for the number one spot, without a doubt.
I was never that into anime, though I agree with toadster about the 1st Pokemon season. Lapped it up and loved it. Then the anime got stale and I stuck to the movie releases instead.

Ung, I cant stnd Pokemon. Its so... ung!!!! Why has Ash and company only bathed 3 times in the entire 500+ episode series? Why aren't James and Jessy sufferring from horrible brain damage from Pikachus thunderbolts? Why aren't James and Jessy dead!? o_0 Why is it that Ash and company havent aged? How is it that a 10 year old kid winds up saving the world over 3 times!? If Ash wants to be the very best..... why does he suck? When Ash jumped into Mew and Mewtos beams in the first movie, why didnt he blowup into massive bloody chunks? He turned into f**king stone... Why did he jump into the beams in the first place!!!? Idiot. Why arent Pokemon ruling the world? They could easily annihilate the entire human race.... Why is Gyrados considered a flying type? Why can rydon use surf? Why are rock type weak to water? Why doesnt brock ever open his eyes? Who was the racist that created Jinx? Why does misty, a 9 year old girl, wear booty shorts? Why does officer jenny and nurse joy have so many siblings!!??? Where does team rocket get the money for all their useless tech and transportation? Why are all the proffesors names trees? Jesus......

I mean, their disguises have been going downhill since their first apperance - obviously missing some pieces.
