Well, I haven't played Rock Band - just Guitar Hero - but the premise and controls are the same, so, I'd bet they're similar.
First of all, the controls are HORRENDOUS. I understand they're trying to emulate actual guitars with the clicky thing and the buttons and the bar, but it just ends up clunky and ineffective. The choices in music are mediocre, and because of the combination of lyrics, drums, guitar, etc, actually LISTENING to the song you've chosen only screws you up further. You need to follow the button set, not the actual music. Sometimes the choices seem entirely random. It's ridiculous. The controllers are expensive, ugly, and difficult to hold without experience with the instruments - and if you HAVE experience with a guitar, why wouldn't you be PLAYING with an ACTUAL guitar? Guitar Hero, and Rock Band by extension, seems like one of those crappy casual series based on a generic wet dream of the masses - Beauty Salon or NFL or whatever - only it's for some inexplicable reason a success.
The graphics in all versions suck. It sounds like you mostly hate the controllers. And I agree with most of your points. If you think about it, the guitar controllers make terrible controllers. And you probably don't want to hear your friends or family singing eye of the tiger. They didn't even include the real songs, they're all covers. But I still say its fun, if probably not worth the money.
It's the instruments that are annoying. I don't know how responsive or comfortable they are, but I don't care, since I can't afford the thing anyway.
Even my Taiko no Tatsujin Wii was bought online without the drum itself. Too expensive, and from what I last heard, it breaks easily. I didn't want to take the risk. If only rhythm game accessories were more robust.
